Innovation in Amaranth

 

The Amaranth Institute organized and held a three-day conference that covered key topics in the field of amaranth. The event attracted a diverse group of presenters and participants ranging from the food industry to academic to development workers.

Individuals and organizations from as far as Africa and Mexico to various US states attended the daily activities. Discussions between some of the AI´s founders and up-and-coming individuals and organizations created interested ideas in the renewal of energy and time in the promotion of amaranth both nationally and globally.

Topics included grain production in Tanzania, Betalain in Amaranth, Forage properties, and appropriate technology.

Puente a la Salud Comunitaria celebrated World Food Day 2010 with their own Amaranth Day in the southern Mexican state of Oaxaca. See In the news for more on the event and their guests: the Canadian Ambassador to Mexico, Guillermo Rishchynski, and Jesús León Santos, winner of the Goldman Prize.

The Amaranth Institute is a 501(c)(3) public charity registered in the United States.
